Ginger Scallion Sauce 薑蓉

Ingredients:

  • 1 lb (0.5 kg) ginger;
  • 10 pieces scallion;
  • 1 1/4 cup (300 ml) vegetable oil (for high heat);
  • 1 tablespoon sea salt.

Recipe:

Make about 1 cup ginger scallion sauce
Good with chicken, pork, egg noodles and vegetables

  1. Peel, clean and grate ginger, make 1 cup grated ginger;
  2. Peel off outer skin of scallion;
  3. Cut into thin slices;
  4. Chop with the back of the knife for the flavor to come out;
  5. Heat 1 cup of vegetable oil in a heavy sauce pan over medium high heat;
  6. Add grated ginger and cook until soft and translucent;
  7. Take out ginger and set aside;
  8. Add the rest of oil and then chopped scallion;
  9. Cook until scallion gets soft and mix ginger back in;
  10. Add sea salt;
  11. Mix wel
