Ingredients:
- 1 lb (0.5 kg) ginger;
- 10 pieces scallion;
- 1 1/4 cup (300 ml) vegetable oil (for high heat);
- 1 tablespoon sea salt.

- Peel, clean and grate ginger, make 1 cup grated ginger;
- Peel off outer skin of scallion;
- Cut into thin slices;
- Chop with the back of the knife for the flavor to come out;
- Heat 1 cup of vegetable oil in a heavy sauce pan over medium high heat;
- Add grated ginger and cook until soft and translucent;
- Take out ginger and set aside;
- Add the rest of oil and then chopped scallion;
- Cook until scallion gets soft and mix ginger back in;
